Chocolate Chip PUMPKIN Donuts

{Vegan and Gluten Free}

Fall is the time to celebrate pumpkins, and luckily there are a lot of things about pumpkins to celebrate. Pumpkins are highly nutritious and rich in Vitamin A. They are high in antioxidants and packed with vitamins that boost immunity. They can protect eyesight, lower your risk of cancer, and promote weight loss, healthy skin, and heart health.

Kitchen Supplies:

1 Small Mixing Bowl

1 Medium Mixing Bowl

Donut Mold (you could try putting them on a baking sheet and shaping them yourself, it will taste the same, just may not look as pretty (;)



Pumpkin Purée


Pure Maple Syrup

Almond Flour (I use blanched)

Baking Powder

Baking Soda

@traderjoes Pumpkin Pie Spice

Chocolate Chips {optional}

Baking Powder:

I make my own baking powder since store bought usually has cornstarch and aluminum in it. To do this I mix: 1/2 cup cream of tartar, 1/4 cup baking soda, and 2 tbsp of arrowroot

Preheat the oven to 350

In a small bowl mix:

2 flax eggs (prepare as directed on the back of the flaxseed packaging) 1/2 cup pumpkin purée 1 tsp vanilla 1/4 C maple syrup

In a medium bowl mix:

1.5 cup almond flour 1 tsp baking powder 1/4 tsp baking soda 1.5 tsp of @traderjoes Pumpkin Pie Spice 🎃

Add the wet ingredients in the small bowl to the medium bowl and combine.

Once combined, mix in desired amount of chocolate chips. I use @santabarbarachocolate ( as I believe they have the cleanest cacao, and you can buy them in bulk! You can use my code 'anextrapinchofsalt' for $10 off your purchase.

Once you have stirred in the chocolate chips, pour the donut mixture into the donut molds. Mine are silicone so do not need to be greased - however, if yours are not silicone, I would suggest greasing them.

Put the donut molds into the oven and bake for 20 minutes.

It is important that you let your donuts cool completely before taking them out of the donut molds, or they will lose their shape.
