Fall Pumpkin Oatmeal Pancakes

{Vegan and Gluten Free}


Fall is the time to celebrate pumpkins, and luckily there are a lot of things about pumpkins to celebrate. Pumpkins are highly nutritious and rich in Vitamin A. They are high in antioxidants and packed with vitamins that boost immunity. They can protect eyesight, lower your risk of cancer, and promote weight loss, healthy skin, and heart health.


Kitchen Supplies:

1 Medium Pan

1 Blender

1 Large mixing bowl


Ingredients:

Flaxseed

GF Rolled Oats

Cinnamon

Salt

Baking Soda

Pumpkin Purée

Unsweetened Applesauce

Almond Milk

Coconut Oil

Maple Syrup

Vanilla Extract


Preheat medium pan over medium heat


In the blender blend:

1 & 1/4 cup of GF rolled oats

1 tbsp of cinnamon

1/2 tsp of salt

1/2 tsp of baking powder

*Blend this together until you get a flour type texture*


In the large mixing bowl combine:

2/3 cups of pumpkin purée

1/3 cup of unsweetened applesauce

1/3 cup of almond milk

2 tbsp of melted coconut oil

2 tbsp of maple syrup

1 tsp of vanilla extract

2 flaxseed eggs prepared according to packaging


Mix everything in the large bowl thoroughly and then add the blended oat flour mixture and combine.


Grease your pan and pour 1/3 cup of the pancake batter onto the pan and flip when ready.


*note: these pancakes take slightly longer to cook than regular pancakes*
